These cakes are great if you feel you need something chocolatey. They are reasonably healthy and sweet potato is a prebiotic! They have a lovely soft texture similar to a chocolate brownie. They only need a little bit of honey to sweeten them as the sweet potato is naturally sweet (hence the name) and the nut butter adds nutrition.
Nutritional Benefits of Sweet Potato
• Excellent prebiotic
• Rich source of vitamins A, C, and B6
• High in dietary fibre which is the food for probiotics
• High in the minerals potassium, magnesium, and iron
2 medium sweet potatoes or 1 large sweet potato
½ cup of nut butter (I use cashew nut butter) or softened butter
¼ cup of coco powder
2 teaspoons of honey
½ teaspoon vanilla extract
½ Chocolate chips, blue berries or Cranberries (optional)
Preparation in advance
Roast the sweet potatoes for approximately 1 hour or until soft. Skin and mash them. You will need 1 cup of the mashed sweet potato.
Separate the eggs.
Turn of the oven to 380°.
Put the cooked mashed sweet potato into a bowl together with the nut butter (or softened butter) egg yolks, coco powder, honey and vanilla extract. Mix together well and set aside.
Beat the egg whites in a separate bowl until they form stiff peaks.
Gently fold the egg whites into the chocolate mix.
Put into 10 cup cake and bake for approximately 20 mins.
Store in an airtight container or freeze them.
