These are great Oat Bars and are a tasty healthy snack. They are gluten free (providing you source gluten free oats - see attached article), they are free from refined sugar, and of course, oats are a prebiotic! However, if you use the chocolate chips there will be sugar in the these, but sometimes you just have to treat yourself!
Basic Oat Bars
200 gms Oats
50 gms Dates
50 gms Butter
2 tablesp Golden Flax Sees - ground
1 Ripe Banana - mashed
4 tablesp Water
½ teasp salt
Additional extras as desired
50 gms Chocolate chips
40 gms Sultanas
25 gms Walnuts, ground almonds or cashew nuts
25 gms Sunflower seeds
½ teasp Mixed spice
Line a square baking tine with non stick paper.
Heat oven to 160 degs.
In a saucepan gently boil the dates in the water until soft. Add the butter and melt. Mix well together so that the dates are mashed.
Mill the flax seeds in a coffee bean grinder, or a food processor.
Put the oats in a bowl. Add the mashed banana and milled flax seeds. Add the date mixture and stir well to combine. Add any of the additional items as desired. If necessary add a little extra water to help the mixture stick together.
Place in a baking tin and press firmly in to the tin. Cook for 15 to 20 mins until golden brown.
When cooled cut in finger size bits. Enjoy.
Store in an airtight container in the fridge or freeze.
