Cashew Nut Ice Cream
This is great for all those cutting out refined sugar or diary products. It is made with cashew nuts and these in themselves are quite sweet and very nutritious.
Cashew nuts have a subtle nutty taste and when soaked and blitzed become creamy. For more information regarding the health benefits of cashew nuts see the related article in the side bar. This is a versatile recipe and could be flavoured with chocolate or fruits such as strawberries, raspberries or apricots or even alcohol for an adult ice cream! I think Baileys Irish Cream would be really good (I must try that). Any flavour you fancy really!
You will need a powerful blitzer (one that can crush house bricks preferable). I have used my coffee been grinder but it will only blitz small quantities at a time.
140g cashew nuts
⅓ cup of dates
Vanilla pod or extract
Soak the cashew nuts and the dates in the water over night. This helps them to become creamy when blitzed.
In the morning blitz with a high speed blender until creamy adding a little extra water if necessary. Add the vanilla and blitz again.
Pour into a container suitable for the freezer and place in the freezer.
After 30 minutes in the freezer, stir to stop ice crystal forming. Repeat after 20 mins. Keep doing this until the ice cream is too stiff to continue.
Once frozen it will need to be taken out of the freezer at least 20 mins before serving.
Same as above but add ½ cup of coco powder when blitzing.
