If for any reason you need to take a break from brewing kombucha or you want to store scobys here are a few tips. I have recently been away for a few weeks, and with a friend's help, the scobys were healthy and ready to start brewing again when I got back. In addition I have a good supply of strong starter tea and made some delicious vinegar!
Firstly, start a new batch of kombucha in the usual way just before you leave. Place your scobys in the tea.
Your scobys will need to be fed while you are away if it is for any length of time. Every fortnight get a friend to make 1 cup of tea with 1 tea bag and 2 tablespoons of sugar. When it has cooled add to the kombucha. This will ensure the scobys are well fed whilst you are away.
Once you are back or want to start brewing again empty the jar and strain the contents into a plastic bowl. The liquid will probably now be quiet strong kombucha or even vinegar depending on how long it has been left. It will be packed with probiotics but may not be very palatable! Reserve about 250 ml (or more) for your next brew as starter tea. You are now ready to brew you kombucha as usual.
If desired bottle the remaining vinegar/kombucha in swing top bottle and use as vinegar. It can also be used for pickling or in vinaigrette, and is good on chips! I will be posting a great recipe for pickled red onion soon!
