This recipe was given to me by a friend and I have adapted it slightly by using kombucha. The pickle makes a delicious, colourful addition to many meals and is packed with probiotics. It's ideal with party foods and great at this time of the year! It can be added to coleslaws, in burgers or in salads to name but a few of it's uses.
2 Red Onions
Kombucha or Apple Cider Vinegar
Teasp Sugar (optional)
You will need a .5 litre flip top jar.
Slice the onions and pack them in the jar, leaving a gap from the top for expansion of the onion.
Cover with kombucha or Apple Cider Vinegar and at teaspoon of sugar if desired. Close the jar tightly.
Leave on the workspace for 1 day and then refrigerate.
Your Red Onion Pickle is now ready and will mature over time.
